and small winding bayous, one on one with Captain Caviar
from the comfort of a 20' custom made flat-bottomed aluminum boat,
with a canopy covering and a port-a-potty on board, just in case !!!

of Louisiana Caviar Company, LLC
which was his mainstay business
for more than 31 years (1985-2016) at CajunCaviar.com
His United States Trademarked product "Cajun Caviar" was Gold Medal winning and internationally known for being an all-natural "True Caviar" produced from a cousin of the Sturgeon,
the Bowfin !!
Cajuns call this prehistoric caviar producing fish a "choupique" which swims abundantly in the freshwater Swamps of Louisiana.
Captain Caviar created a whole new industry for his home state !! A World Class Caviar from a Louisiana fish !!! YUM
After selling his caviar business in 2016, he purchased Cajun Jack's renaming it Captain Caviar Swamp Tours.
